I have discovered that the secret to fluffy pancakes is baking powder. Through trial and error, I noticed that my pancakes would seem to puff up in the pan when I had a good baking powder ratio. My pro tip is DO NOT LEAVE OUT BAKING POWDER.
Depending on the thickness you wish your pancakes to attain, add more or less milk. A tablespoon more will thin the pancake batter and make it come out flimsier, and a tablespoon/s less will provide a thicker pancake.
LOW HEAT IS THE KEY for this easy fluffy pancake recipe. If you put your stove on high heat, your oil will dry up, leaving your pancake burnt faster than you can blink. However, if you start on low heat and leave the pancake to cook for longer, you have a more controlled and golden-brown outcome.
Easy fluffy pancake recipe
Ingredients:
2 ½ cups flour
4 tbsp sugar
1 ¼ tbsp baking powder
3 teaspoons vanilla essence/maple syrup
1 tsp salt
2 eggs
1 ½ cups of milk
6 tbsp melted butter/ oil
Method:
- In a mixing bowl, combine the flour, sugar, salt, and baking powder.
- In another bowl, add melted butter, eggs, milk, and vanilla and mix until combined.
- Pour the liquid mixture into the flour mixture and mix until it forms a batter. If you wish to make the batter thicker, add less milk. If you want to make it runnier, add more milk until desired texture
- Set a medium frying pan over low heat. Add oil to the frying pan to thinly coat it then wait for the oil to heat. Once the oil is simmering, add about ½ cup of batter to the middle of the pan.
- Wait 4-5 minutes to flip to the other side or simply until bubbles form on the top side and the top looks rubbery. Cook evenly on the other side and repeat for the remainder. If you find that the oil has dried up, add a bit more in between batches.
- Serve the pancakes with maple syrup, golden syrup, or berries and enjoy!

- If you’re not sure when to flip the pancakes, the top surface of the pancake will look almost rubbery, and that indicates it is ready to flip over.
- After serving, the pancakes can be stored for up to 2 days in a fridge. Although, I do not recommend storing them longer than a day.
- It does take patience but leaving the pan over low heat makes sure that you don’t burn the pancakes. So, patience is key!
