I have discovered that the secret to fluffy pancakes is baking powder. Through trial and error, I noticed that my pancakes would seem to puff up in the pan when I had a good baking powder ratio. My pro tip is DO NOT LEAVE OUT BAKING POWDER.<\/p>\n\n\n\n

Depending on the thickness you wish your pancakes to attain, add more or less milk. A tablespoon more will thin the pancake batter and make it come out flimsier, and a tablespoon\/s less will provide a thicker pancake.<\/p>\n\n\n\n

Ingredients:<\/p>\n\n\n\n

2 \u00bd cups flour<\/p>\n\n\n\n

4 tbsp sugar<\/p>\n\n\n\n

1 \u00bc\u00a0 tbsp baking powder<\/p>\n\n\n\n

3 teaspoons vanilla essence\/maple syrup<\/p>\n\n\n\n

1 tsp salt<\/p>\n\n\n\n

2 eggs<\/p>\n\n\n\n

1 \u00bd cups of milk\u00a0<\/p>\n\n\n\n

6 tbsp melted butter\/ oil<\/p>\n\n\n\n

Method:<\/p>\n\n\n\n

  1. In a mixing bowl, combine the flour, sugar, salt, and baking powder.<\/li>\n\n\n\n
  2. In another bowl, add melted butter, eggs, milk, and vanilla and mix until combined.<\/li>\n\n\n\n
  3. Pour the liquid mixture into the flour mixture and mix until it forms a batter. If you wish to make the batter thicker, add less milk. If you want to make it runnier, add more milk until desired texture<\/li>\n\n\n\n
  4. Set a medium frying pan over low heat. Add oil to the frying pan to thinly coat it then wait for the oil to heat. Once the oil is simmering, add about \u00bd cup of batter to the middle of the pan.\u00a0<\/li>\n\n\n\n
  5. Wait 4-5 minutes to flip to the other side or simply until bubbles form on the top side and the top looks rubbery. Cook evenly on the other side and repeat for the remainder. If you find that the oil has dried up, add a bit more in between batches.<\/li>\n\n\n\n
